I run my 18' aluminum guide boat with a 150 hp jet with no problem. The jet costs be about 30% of my efficiency over that of the prop so puts it in the same ball park as your 112 hp. I normally run three customers and myself on salmon/steelhead trips, sometimes in only 4" of water at about 40mph. Thus your described package should be fun and quite compatible to what you want to do.
