Problem with monel is since the price is so high nobody really stocks the stuff. This becomes a problem if you require monel shafting and you bang up somplace and need a replacement. Most shops don't stock it, so it becomes a special order (AKA expensive) plus you have to wait for it to be shipped, then machined. With the extra cost involved I recommend SS unless you have deep pockets and can afford spares.
Cutless bearings for 1-1/4" shafts come stock with OD's of 1-1/2, 1-3/4, 2" and 2-1/8" The 1-1/2" Cutless come with a stock OD of 2" and 2-3/8" so if you are lucky enough to have a 1-1/4 shaft with a 2" Bored strut you can just pop out the 1-1/4 shaft bearing and install the 1-1/2" bearing. Me I'm not so lucky as I wanted to bore out my own strut to to go with 1-3/8 shafts, but the Strut is bored for a 1-1/2" bearing and no meat left to open to 2".
The cute fish names are no more, Morse used to use that code, but was bought out by Duramax and just get boring names in alphabetical order, with the exception of the non-metallic bearings using fe-male names.
