I wouldn't worry about the wear usually seen around the stuffing box. Shorten or lenghten the hose a tad as mentioned will be just fine. I say usually because I have seen one in particuliar that was worn almost 3/16-1/4" on an 1-1/4" shaft. The guy wanted me to weld it up or leave it, as it didn't leak much. It was for a Sea-Tow boat. Think they would be a bit more savy.
Also can I mention go with Walters clamp fit couplings. Another item I truly recommend. With these you just have the shaft fit for the coupling and it makes an easy install. Fitting the coupling may run about 35 bucks and saves you a whole mess of time. I can pull my two shafts in under a half hour. Especially nice if you ever decide to swap out shafts dockside. Just loosen the clamping bolts and set screw, tap a pair of screwdrivers into the slots and the coupling just tap off.
