Offshore Fishing Question

As progress on our B31 project continues, we are starting to get excited about the upcoming fishing season on the South Shore of LI. We have many inshore setups but would like to acquire some tackle for offshore fishing. Since we now own the finest sportfishing boat ever made, we need tackle to match as this would only be appropriate.

We would like to get some basic high quality offshore gear to target tuna and shark. Will probably do a combination of chunking and trolling. Probably won't make it out to the Hudson Canyon this season but we would like to venture somewhat offshore from time to time (i.e., Cholera Banks).

Could any of the faithful recommend some basic parameters for offshore gear? I was thinking of purchasing 4 outfits to start. Two 30-60lb class rods with matching 30s and two 40-100lb class rods with 50s. Probably will add two more outfits as things progress. Does this sound like a good start? Don't want to go too heavy to start as I think we will do some trolling for smaller fish. Any input would be most appreciated. Thanks.
