Relative humidity (moisture content of air) is most important in air conditioning.
It can be easier to condition dry air @ 95 degrees than moist air @ 80 degrees. This moist air would have a higher relative humidity than the dry air.
A rule of thumb on land is 400 sq ft per ton (12000 btuhs)
As Bruce noted the boats are so poorly insulated that it's like air conditioning a garage.
