Why new rudders?

Yesterday's sea trial reminded me what a bear the B28 can be to steer, so now new rudders are on my TO DO list, but I wonder:

Why buy new rudders, why not just remove the existing rudders and have additional steel welded to the back and/or bottom of the current rudders?

My current rudders only extend down half way in front of the props. Replacement rudders seem to retain this dimension, any reason not to go a little deeper?
