I've never run into a panel that was just glued into place.
Some panels are true puzzels when it come to disassembly.
A common practice I run into is a grid of wood is fastened to the ceiling.
If its a 3 panel set up, the center panel has wood strips that stick out from the sides, enough so that it won't sag.
Those tabs are screwed to the grid.
The two side panels have the same wood strips sticking out that go over the center panel to support the edge, no screws.
At the outside edge they are either screwed and trim put up or can be hook and loop tape so they have a clean edge with no trim.
Other time verticle side panels support the overhead.
