Craig,

It's a realitively straight forward job... Drop your rudders, remove the rudder ports, dig out the old backing pads, epoxy bed new boards in, epoxy glass over them with a single layer of heavy fiberglass cloth, bore the holes for the ports, and re-install.

Wipe a complete coat of 5200 into the edge grain of the wood as soon as you bore the holes...
