Fighting chair - varnish vs. oil

Well, I've stripped all the varnish off the Release Marine fighting chair and ladder back. Now it's time to refinish. Was going to just do the usual, put 25 coats of varnish back on it. On the other hand, all the teak in AJ's cockpit is just oiled. The cabin door, the rear window frames, the cockpit trim. Why do I want to put varnish on this beautiful teak so I can strip it off a couple of years from now? Soooooo, I'm leaning towards just sanding it out to 400, cleaning it deep with Nu-Teak, and oiling it with Amazon. Sure, it will last a year or so before I have to clean and oil it again, but that's a 2 hour job vs. a two-week job at best to varnish it. Varnish sucks.
