Bill,
First, the main reason that anything much over 300 HP is too much shaft angle... The standard shaft angle for the B31 is 15°, which works fine with power in the 300 range or lower.
Above, say 330 HP, the shaft angle will need to be reduced so that the boat doesn't nose dive at around 28 kts. This means radically changing the hull design with prop pockets & that equates to BIG money.
The B31 is a 35 kt hull, meaning that over that speed the boat becomes increasingly unstable.
The guys you're talking with may know their engines, but apparently don't know the B31. Stick to your guns, re-power with below 330 HP, use a 2:1 transmission & you'll wind up with a WOT speed in the range of 32 - 34 kts, which is where you need to be.
