Strut Backing

I'm replacing the strut backing on my 31'. As anticipated, the stuff I cut out of there was totally shot, soaking wet and soft. Anyway, in reading Capt. Pat's article, I've gone ahead and fabricated new blocks using two pieces of 1/2" marine ply with 12oz cloth in between and another piece on the bottom. I've overdrilled the holes for the bolts, filled with thickened epoxy and redrilled at the proper size to prevent saturation of the wood. I'm planning on bedding with thickened West System epoxy and glassing in using 1708 cloth and epoxy. Before finishing, I figured I'd better check here and make sure I'm not missing anything! Any recommendations? What kind of caulk should I use? How many layers of glass?(I was thinking two). Any suggestions would be greatly appreciated!
