Timing, UV, is everything

The Bride and I went to my brother,Tom's for Christmas with his crew. As always he was preparing the groaning board of Smithfield ham, Edwards sausage and several other VA delicacies. As we stood over the stove he told me there was a quart of Chincotegue Oyster that were for later. I asked him about prep and he mumbled something like, "You do it". Soooo, I raced home, got my freshly printed copy of "Oyster Saute" that UV had posted last week. Didn't have, nor do I know what Tony Chacerie's is so did the best I could with what was in Tom's ample spice rack. UV, You be da bes'. That was absolutely fabulous, and the best part was of all the southerners in the house only Tom and I eat oysters. Split the quart with a couple of cold one. Whew! It's always better with a little South in your mouth. Got to go to Looosiana this Spring. Got to find out what Tony Chaceries is.
Aren't oysters customary along with black-eyed peas and stewed tomatoes for good luck in the new year? Alright! Train wreck and oyster saute for January One.
