John, when I redid my dinette seats last year, I used oak veneer plywood cut out to the same dimensions as the stuff I pulled out. I then took thin strips of oak and epoxied them to the open edges, sanded, and coated the whole thing with cetol marine. It came out pretty good, if your interested drop me note and I can probably dig up a couple of picture.
