I'd use plywood... Cheap, easy to work with, now surprises.
The reason for laminating is simple: No fairing wood grain that will still come back to haunt you. The time & materials spent trying to fair out wood grain far out weigh the time and materials to laminate, AND, you'll never get a surface as good as the laminate yields right out of the box. In addition, the surface you get from lamination is nice and hard, so you don't worry as much about denting it.
Believe me, I've tried to cheat past laminating in the distant past only to stand in front of a mirror and say "I told you so..."
Using high tech foams & panels like Nidacore is very expensive and only called for where weight savings are critical, (or pockets are deeeeeep), PVC Foam Board is great for exterior panels and cabinetry, not that much advantage on interior cabinetry & would still need to be laminated to obtain a good hard surface.
For example, most of the interior cabinetry in "Buddy Boy" is done in 1 face laminated 1/2" cabinet grade plywood. On the other hand the cabinet panel and doors on the flybridge console are 1 face laminated PVC Foam Board. The core material used in the console bubble is 1/2" PVC Foam Board, fiberglassed on both sides.
I've even used laminate epoxied to the inside of the hull & below the engines as "instant fairing"...
