Interior materials advice needed

Got a little ambitious with the sawzall and drill/driver the other day, and now the dinette and port side panel with the 3 storage compartments are out of the boat. Current plan is to replace the dinette and panel with a pretty similar set-up, and paint it white with teak trim, with teak & holly sole/hatches. Questions--
-Should I build the new dinette seat boxes out of plywood or can I use something else (like Azec (sp?) board?)
-Assuming I build out of ply, can I paint right over the ply (after proper prep), or should I cover with a laminate and then paint. Seems Capt. Pat goes the laminate then paint way, and there's gotta' be a good reason.
-I plan on making the sole hatches out of 3/4" teak & holly plywood. Sound OK?
Any other advice appreciated. Probably staying with dinette set-up like original because it works pretty good for wife/kids/lunch and friends/beer to sit around, but open to suggestions. Thanks.
