Capt. Dick - the reason Coonass food is not well liked up your way is the boneheads that make it in the local "cajun" (ugh) restaurants think it's only cajun if they put so much red pepper in it that it burns your lips and enough bell pepper to make you fart for a week. Not so with the authentic stuff. You will not find any of that in my recipes. The whole beauty of it is that it is self-seasoning. Very seldom, if ever, do we add any seasoning to the stuff. Like the jambalaya Darryl and his Mama kept making for us at the UVI - no lip burn, no fart stuff.
The worst I ever had was with a bunch of the Faithful in FLL a couple of years ago at Lulu's Bait Shop on the beach down from the Flophouse. Advertised as a coonass place, but should have been burned to the ground and the ashes dumped in 500 fathoms. Gawd, the stuff was horrible.
