Last summer I fished the UVI and had some of that jambalaya every chance I could. And that was everyday. When I got to the airport in New Orleans in the beginning of the week, there was some time to kill so I told a bus to the city and had crawfish pie, fillet gumbo and the jambalaya. The way the natives like it. The lunch was great. And every time the jambalaya was very different which, to me, shows that it's an art and not a science.

So, since June I've had none. The Irish women aren't too big with Cajun food. At least not here. But these posts could turn things around! There's hope.
