I used three blocks pretty much as you described, and three pairs of jackstands. You may be able to get by with two pairs, but mine is blocked for an extended period of time during restoration. Also ran saftey chains from an eye bolt on the blocks to the jack stands on two pairs, probably overkill but gives me piece of mind.
