Nothing like softshells Vic but...next time you guys (and gals) go out and seem to catch nothing but skates KEEP THEM!!!

Cut the wings off, skin them and poach them in water and a little white vineger. Next...scrape the meat off both sides of the cartilage and use in your favorite crab cake recipe. Trust me on this. You'll never curse Skates again!!
