I suggest painting as gelcoat is a lot more work and not as oil resistant (perosity) as a 2 part linear polyurethane.
Whit I did after epoxy coating the bulkheads, filling screw holes, etc was to fair out the roving on the interior of the hull, with a fairing compound, (to acheive a smoother surface making it easier to clean) and sprayed awlgrip. I know many of the faithful prefer Imron. I also did this to the interior of my cockpit. Additionally, I used an epoxy barrier coat in the bilge.
