Those are pretty fancy numbers for 210's, about what I get with the 250's and I'm underpropped some. I agree that the larger diameter props will put more of that famous Cummins torque in the water - I run 21x22 three blades thru 1.53:1 gears. Tony Athens, the Cummins guru on boatdiesel.com, thinks the 210 and 250's are about the most bulletproof 6BTA's ever built that will provide the kind of speeds we want in the B31. But he warns over and over not to overload them by over propping. He thinks the simple way to check is to see the WOT rpm with a full load on board and any enclosures zipped up. He wants to see 2650 or better 2700. The only real way to tell is with pyrometers on the exhaust, and the EGT should stay at or under 900 at high cruise of 2400. Poor boy's way is with an infrared heat gun and shoot each exhaust stack at cruise. My gun only goes up to 800, but when I checked mine, they all ran about 750 at 2200, flickered on 800 at 2300 and off the scale at 2400, so I'm guessing it's about 850 or so.
Great engines - I have some 2500 hours with no trouble, no oil burn. Just change the oil every 100 or so hours, use Shell Rotella T 15w40, use premium Fleetgaurd oil filters, keep the air clean, the fuel clean, and KEEP PAINT ON THEM, ANDRE'. And shoot them now and then with a 50/50 mix of Corrosion X and lacquer thinner.
